Our Story
Sebby’s Scrolls was born during Melbourne’s COVID-19 lockdowns, when Sebastian and Annabelle started baking cinnamon scrolls from their home kitchen. The overwhelming response from friends and family encouraged them to take a leap of faith. By the end of 2021, their scrolls were being stocked in 45 cafes across Melbourne, and they opened their own storefront at 367 North Rd, Caulfield South. The bakery now produces thousands of scrolls each week, all hand-rolled and baked on-site.
The Scrolls
At the heart of Sebby’s Scrolls is the classic cinnamon scroll: soft, gooey dough layered with cinnamon and caramelised brown sugar, topped with a generous swirl of silky cream cheese icing. Each scroll is baked in an individual mould, ensuring a rich layer of caramelisation at the base. For those seeking variety, the bakery offers a savory Vegemite and cheese scroll, featuring pillowy dough encrusted with cheese and a perfectly balanced smear of Vegemite. Vegan options are also available, with plant-based scrolls that don't compromise on flavor or texture.
The Experience
Sebby’s Scrolls operates as a takeaway-only venue, with a charming 'hole in the wall' setup. Customers can watch the baking process through large windows that surround the kitchen, adding to the bakery's inviting atmosphere. A recent addition is the takeaway coffee window, serving Allpress espresso drinks to complement the scrolls. Adjacent to the bakery is a lovely garden and seating area, perfect for enjoying your treats in the sun.
